This "Black Dragon" of tea, Oolong tea is named after a Chinese word, "wu-lung", meaning "Black Dragon", representing the cross between two types of teas (Green and Black tea). To maximize the most Oolong during harvest, large tea fields are used in regions of Taiwan. By carefully waiting for the right mixture of green and red tea leaves, overseers stimulate the fermentation process by gently bruising the tea leaf.
